360°Eat Guide celebrates sustainable dining in Tallinn

The restaurant guide 360°Eat Guide focuses on sustainable gastronomy. Restaurants are ranked according to how the restaurant considers the origin of raw materials, food waste, recycling, and staff training in sustainability issues. In order to get a high score from the 360°Eat Guide, restaurants must give as much attention to the processes behind food production as they do to what goes on the plate. Scores are divided into two parts: gastronomy points (maximum 100 points) and sustainability circles (maximum three circles).

Out of 30 restaurants in Tallinn, eight have been awarded sustainability circles: Fotografiska has three circles; Lee and Peet Rut have two; and Barbarea, Rado, Lore Bistro, Cru, and Mimosa each have one sustainability circle.

Fotografiska Restaurant & Rooftop Garden

Restaurant Fotografiska works on a zero-waste basis. We use inventive ways in cooking – we don't waste ingredients or create waste. Everything from the flower to the root or from the nose to the tail can be used – both in the kitchen and bar. The little amount that's left over is used in compost, which makes its way back to the fields and garden boxes. The soul of our food is Peeter Pihel, a sustainable restaurant advocate, who has had a versatile career (Pädaste, Fäviken Magasinet, Fulgurance), and who has shaped the flavours of modern Estonia. Kristjan Kiho is responsible for the seasonal and unique wine list. Lee Restaurant

Restaurant Barbarea

Barbarea is a restaurant and natural wine bar in Kopli, located in the old Põhjala Factory.When Bakery Karjase sai closes its doors in the afternoon, it opens them as Barbarea. The entire menu is inspired by different parts of the world, and the dishes are meant to be shared so that the whole experience can be enjoyed with others. Half of the menu consists of pizzas, whose dough we make from Estonian and Italian flours, and bake in a Gianni Acunto wood-fired oven. We care about high-quality raw materials, so we work with local farmers and other small organic producers on a daily basis to ensure that we always have fresh raw ingredients.
